A healthy twist on an old favorite, these rice krispie treats are brought to another level with date paste, flax, almonds, and shredded coconut. They're not just a delicious treat, they're a healthy snack that'll satiate and fuel you instead of just giving you a sugar rush.

Protein Packed Rice Krispie Treats

Ingredients:

  • 110g Rice cereal
  • 120g Date paste
  • 40g Agave syrup
  • 100g Brown rice syrup
  • 42g Coconut oil
  • 12g Protein powder
  • 20g Oatmilk
  • 1 tsp Vanilla extract
  • 1 pinch Sea salt
  • 1 Tbsp Ground flaxseed
  • 15g Dessicated coconut
  • 10g Sliced almonds

Equipment:

  • Saucepan
  • Spatula
  • Large bowl
  • Baking tray

Steps:

  1. Combine date paste, syrups, coconut oil, flax, protein powder and oatmilk in a medium saucepan over low heat.
  2. Stir constantly until smooth and just starting to bubble, about 3–5 minutes. The flax will thicken the mixture slightly — that’s good.
  3. Remove from the heat and stir in vanilla and sea salt.
  4. Pour the hot mixture over the rice cereal in a large bowl. Fold quickly and gently until all cereal is coated.
  5. Spread evenly in a baking tray. Top with sliced almonds and coconut.
  6. Cool in the refrigerator for at least one hour.
  7. Enjoy!
